When a person has a food allergy, the digestion of food is the same as in someone without a food allergy. Food is broken down and nutrients pass from the small intestine into the blood.

Food allergens are often protein fragments, but they are not the antigens found on the surface of bacteria. Some antigens are specific to bacteria (as you saw in the previous activity), others are specific to food, and others can be on pollen or other substances such as animal hair or latex.
